Soda Bread

Soda Bread is so easy to make - the perfect homemade bread for beginners. 

Soda Bread in the Portmerion for AGA Stacking Casserole

Serves 4

450g plain flour

2 tsp bicarbonate of soda

1 tsp salt

55g pumpkin seeds

25g sesame seeds

55g sunflower seeds

400ml buttermilk

Preparation Time: 10 minutes. Cooking Time: 35 minutes. 

1. Line a baking sheet with Bake-O-Glide or baking parchment and lightly dust it with flour. 

2. Sieve the flour with the bicarbonate of soda and salt and stir in the seeds.

3. Make a well in the centre and add most of the buttermilk. Working quickly, mix to a softish dough.

4. When it forms a ball, turn it on to a well-floured surface and lightly work into a flattened loaf shape, approx 20cm diameter. 

5. Place on a baking sheet or a rectangle of Bake-O-Glide lightly dusted with flour and use a sharp knife to cut a deep cross in the top.

6. Place in the oven. CAST OVEN: on the grid shelf placed on the floor of the roasting oven or oven on R6 setting. FAN OVEN: preheated to on R6/180°C/350°F. Bake for 30-35 minutes or until the bread is golden and cooked through.

Tip: You can use this recipe to make individual scones, simply reduce the cooking time to 10-15 minutes.
