Pickled Radish and Cucumer

Enjoy with sliced bread as a starter or crudité. Recipe produced by AGA Demonstrator Penny Zako. 

Radishes on a chopping board

10-12 radishes – finely sliced

½ cucumber – peeled and cut into ribbons

3 tbsp. white wine vinegar

2 tbsp. caster sugar

Salt

1. Mix the radishes and cucumber in a bowl and rub in a little salt. Combine the vinegar and caster sugar and pour over.

2. Sit on the AGA warming plate or oven for 10 minutes or longer.

3. Toast sourdough bread and drizzle with olive oil to serve.
