Grilled Goat's Cheese and Red Onion Bruschetta

Caramelized red onions topped with melted goat's cheese on toasted ciabatta make a simple yet delicious starter or lunchtime snack.

Grilled Goat's Cheese and Red Onion Bruschetta

Serves 4

1 tbsp olive oil

2 red onions, sliced in rings

1 tbsp red wine vinegar

1 tbsp dark brown sugar

1 tsp fresh thyme, chopped 

Salt and black pepper, as needed

4 slices ciabatta

4 slices ripened Goat’s cheese (rind on)

4 sprigs fresh thyme
 

Preparation Time: 10 minutes. Cooking Time: 25 minutes.

1. Heat the oil in a frying pan on the boiling plate, hotplate on boiling setting or induction hob.

2. Add the onions and fry until soft, allow them to caramelise and brown. Reduce the heat or move to the edge of the hotplate if needed.

3. Stir in the vinegar, sugar and thyme and heat through, stirring throughout. Season to taste.

4. Place the ciabatta on the grill rack in the small roasting tray and place in the oven. CAST OVEN: on 1st or 2nd set of runners in the roasting oven or oven on R8. GRILL: preheated grill on the second runner. Toast ciabatta on both sides, do not overbrown the second side. 

5. Divide the caramelised onions between the slices and top each with a slice of goat’s cheese.

6. Place under grill on position 2 and cook until cheese has melted (approximately 2 minutes).

7. Garnish with fresh thyme and serve with rocket salad.
