Super easy and so tasty, these Christmas Spiced Nuts make for the perfect accompaniment for Christmas drinks.
2 tsp ground cinnamon
2 tsp ground ginger
2 tsp ground allspice
½ tsp freshly grated nutmeg
8 oz (225g) caster sugar
4 large eggs whites
1 lb (450g) mixed nuts, e.g. almonds, cashews, macadamias, pistachios
1. Stir the spices into the sugar until thoroughly combined. Lightly beat the egg white and then gently toss the nuts in the beaten egg white. Roll them in the spice mix to coat them liberally. Spread out in a single layer in two large AGA baking trays lined with Bake-O-Glide or baking parchment. Reserve any surplus spice mix for reapplying during baking.
2. The nuts are then dried to set the spice coating. This is achieved in either a simmering oven or warming oven (if available)*;
Simmering oven: place one tray onto a grid shelf on the floor of the oven, and the second on the third set of runners. Stir the nuts after 30 minutes and swap the trays around after an hour. Continue drying for an hour or so with the trays on folded cloths on the closed insulating lids.
Warming oven: place one tray onto the floor of the warming oven, and the second on the middle set of runners. Stir the swap the trays as above. Continue drying for a further hour swapping the trays once more.
