This delicious crumble is the perfect winter comfort food.
Ingredients
For the crumble mix:
175g (6 oz) plain flour
85g (3 oz) wholemeal flour
175g (6 oz) butter
175g (6 oz) demerara sugar
55g (2 oz) jumbo oats
55g (2 oz) toasted hazelnuts, halved
For the fruit filling:
1.5kg (3 lb 5 oz) frozen red fruit, if thawed pour off some of the liquid
55-85g (2-3 oz) sugar
Serves 6
Method
1. Place the flours, butter and sugar into a bowl and rub in the butter until the mixture resembles breadcrumbs, or use a food processor for this stage. Stir in the oats and hazelnuts.
2. Tip the prepared fruit into the base of a roasting tin and sprinkle with sugar. Tip over the crumble mixture.
3. Hang the roaster from the third set of runners in the baking oven and cook for about 35-40 minutes until the crumble is golden and the fruit cooked. If your AGA does not have a baking oven, hang the roaster from the lowest set of runners in the roasting oven and cook for about 20-25 minutes until golden. Slide the cold plain shelf on the second runners down and continue to cook for a further 10-15 minutes. Alternatively, after 25 minutes move the roaster down to the middle of the simmering oven, where it can finish cooking and wait to be eaten.
Serve with custard, cream, crème fraiche or ice cream.
