Quick Berry Jam

Making jam is a delightful way to capture the essence of summer fruit and enjoy it all year round. It’s a simple but rewarding process, requiring only a few basic ingredients.  

Quick Berry Jam

Makes 4 x 450g jars

800g frozen mixed berries

15g butter

1kg jam sugar

TIP: If you can’t find jam sugar, use granulated sugar and 2-3 tbsp liquid pectin depending on how you like your jam set.

Preparation Time: 3 minutes. Cooking Time: 15 minutes. 

1. Place the frozen fruit into a large pan, a preserving pan is ideal for this, and squash with a potato masher. When soft, add the butter.

2. Bring to the boil on the boiling plate or hotplate on boiling setting. Add the jam sugar, dissolve on the simmering plate, or hotplate on simmering setting, then return to the boiling plate and boil for a further 4 minutes.

3. Meanwhile, wash the jam jars in hot water then place them in the simmering oven to dry. 

4. Allow the jam to rest for 5 minutes then pour into the sterilised jam jars. Cover, cool and label.
