Meringues

With just two ingredients you can make delicious and light baked Meringues.

Makes 16

3 large egg whites 

180g caster sugar

 

Preparation Time: 15 minutes. Cooking Time: 2 hours. 

1. Place a sheet of greaseproof paper or Bake-o-Glide on a large baking sheet.

2. Place the egg whites in a large, clean grease-free bowl and whisk the eggs until they stand up in stiff peaks.

3. Gradually whisk in the sugar, a spoonful at a time. The mixture should be thick and hold in peaks.

4. Using a plain nozzle, pipe 16 rounds onto the lined baking sheet.

5. Place the baking sheet in the oven. CAST OVEN: simmering oven or oven on B1 setting on position 3. FAN OVEN: preheated to B1/100°C/200°F. Cook for 1 ½ - 2 hours until the meringues peel off the paper easily.

6. Cool on a wire rack and store in an airtight tin.
