AGA Roast Potatoes

Roast potatoes in the AGA are perfect every time – with crispy skins whilst remaining beautifully fluffy inside. Goose fat gives a great result, but any vegetable or olive oil can also be used.

AGA Roast Potatoes

Serves 4

1 kg Maris Piper potatoes 

1 tbsp salt

25g goose fat

1 tbsp plain flour

Preparation Time: 4 minutes. Cooking Time: 45 minutes. 

1. Place potatoes in a large AGA saucepan, cover two-thirds with cold water and add salt. Bring to the boil on the boiling plate, hotplate on boiling setting or induction on high. 

2. Parboil for 8-10 minutes, until the potatoes are starting to soften, then drain well for 5 minutes, until the steam subsides.

4. Place fat (or oil if preferred) into an AGA roasting tin and place in oven to heat. CAST OVEN: on the grid shelf set on the floor of the roasting oven or oven on R8 setting. FAN OVEN: preheated to R6/200°C/400°F. Heat for 5 minutes.

5. Add the potatoes and turn so that, they are well coated.

6. Place in the oven. CAST OVEN: on the grid shelf set on the floor of the roasting oven or oven on R8 setting. FAN OVEN: preheated to R6/200°C/400°F for 15 minutes. Roast for 15-20 minutes depending on size. 

7. Turn potatoes over to even the crisping. Return to the oven for further 15 -20 minutes until golden and crisp.
