Flatbreads bring a delightful Mediterranean touch to any meal. They’re easy to make and cook beautifully directly on the simmering plate. Serve them alongside tagines, casseroles, or slow-roasted lamb for a perfect pairing.

Makes 10
350g strong white flour
1 tsp baking powder
1 tsp salt
1 ½ tsp sugar
250g plain yogurt
Preparation Time: 5 minutes. Cooking Time: 6 minutes.
1. Sieve flour, baking powder and salt into a bowl, then stir in the sugar.
2. Add the yogurt and mix into a stiff dough.
3. Lightly knead the dough on a floured surface.
4. Divide into 8-10 balls and roll each ball into a round or oval shape.
5. Cook for just a few minutes directly on the AGA simmering plate, hotplate on simmering setting or lightly oiled non-stick frying pan on induction hob on medium high.
6. Turn once the underside is coloured.
7. Wrap in a clean tea towel to keep warm until ready to serve.
