Flemish Beef Casserole is a traditional Belgian stew, ideal for cold winter evenings.
Ingredients
60g (2 ¼ oz) butter
5 Onions, Sliced
800g (1 ¾ lb) Chuck/Braising/Stewing Steak
115g (4oz) Kidney
115g (4oz) Liver
300ml (1/2 pint) dark beer
1 slice of bread spread with mustard
1 piece of dark unsweetened chocolate
Serves 4
Method
1. Melt the butter and fry the onions until lightly browned, remove from the pan and reserve. Cut the meats into 2 ½ cm (1 inch) cubes and fry until brown.
2. Place the onions and meats into a casserole, pour over the beer and add the slice of bread and the chocolate.
3. Bring to the boil on the Hotplate then transfer to the Main Oven.
4. Set the Main Oven to 140ºC (275ºF),Gas Mark 1 and place on the grid shelf on the fourth set of runners down and cook for about 3 hours.
