Oven-Roasted Baby Back Ribs

These American-style ribs are a delicious taste of sunny days, bursting with flavor. For the best results, season the ribs at least 4 hours, or up to 24 hours, before cooking. We've added a BBQ sauce glaze, but it's optional! Many thanks to our friends at Viking for this delicious recipe. 
 

Oven-Roasted Baby Back Ribs

Serves 6

2 tbsp light brown sugar 

1 tsp salt 

2 tsp black pepper 

2 tsp garlic powder 

1 tsp onion powder 

½ tsp cayenne pepper 

1 tsp sweet paprika 

1 tsp smoked paprika 

1 tsp chilli powder 

 ½  tsp mustard powder

1 rack pork baby back ribs 

4 tbsp barbecue sauce
 

Preparation Time: 10 minutes + Marinating Time. Cooking Time: 2 hours 30 minutes.

1. Place sugar, salt, pepper, garlic powder, onion powder, cayenne, sweet paprika, smoked paprika, chilli powder and dry mustard in a small bowl and mix well.

2. Cut the rack of ribs in half and rub the BBQ seasoning all over. Wrap tightly in foil and refrigerate until ready to cook. For best results, season ribs for at least 4 hours and upto 24 hours before cooking.

3. Remove ribs from refrigerator and place in an AGA Roasting Dish. Do not remove the foil. 

4. Place in the oven. CAST OVEN: on 4th runner in baking oven or oven on B4. FAN OVEN: preheated to B4/ 325oC/160oF. Cook for 2 hours until the meat should easily pull from bones when pierced with a fork. If they are not yet tender, bake for a further 30 minutes. 

5. If you want the BBQ glaze, open the foil and brush the ribs with barbecue sauce and turn up the heat. CAST OVEN: transfer to roasting oven or oven on R8. FAN OVEN: increase heat to R6/180 oC/350oF. Cook for about 5 minutes until the top is crispy.

6. Transfer ribs to cutting board and slice between bones. Serve with barbecue sauce on the side, if desired.
