Double Chocolate Chip And Macadamia Nut Cookies

Makes 16

85g butter, softened

115g caster sugar

55g light soft brown sugar

½ tsp vanilla extract

1 egg, beaten

175g self raising flour

60g Macadamia nuts, chopped

55g white chocolate chips

55g milk chocolate chips

Preparation Time: 18 minutes. Cooking Time: 12 minutes. 

1. Line several baking trays with Bake-O-Glide

2. Cream the butter and sugars together until light and fluffy. 

3. Gradually beat in the vanilla and egg until combined.

4. Fold in the flour, nuts and chocolate chips and mix to a soft dough. 

5. Spoon tablespoonfuls of the mixture onto the lined trays, leaving room for each cookie to spread.

6. Place in the oven. CAST OVEN: place tray on grid shelf on floor of the baking oven or oven on B4 setting. FAN OVEN: preheated to B4/160°C/325°F. Bake for 12-15 minutes or until lightly golden brown. Turn the baking sheet halfway during cooking.

3. Cool on the tray for a couple of minutes before transferring to a wire rack.
