Oven Baked Chicken Fajitas

We all love fajitas and this recipe from our friends at Viking makes them even simpler and stress-free. You can substitute steak for chicken, use a combination of both, or even opt for a vegetarian version by adding mushrooms and extra vegetables. The spices can be easily swapped out for a shop bought fajita or taco spice blend.

Oven Baked Chicken Fajitas

Serves 4

1 tsp salt 

2 tsp chilli powder 

2 tsp garlic powder 

1 tsp cumin 

2 tbsp olive oil  

400g skinless chicken breasts, sliced into thin strips

1 onion, halved and sliced 

1 red pepper, sliced

1  yellow pepper, sliced

1  green pepper, sliced 

8 flour tortillas 

Guacamole, to serve

Sour cream, to serve

Grated cheese, to serve
 

Preparation Time: 15 minutes. Cooking Time: 15 minutes.

 1. Place the salt, chilli powder, garlic powder, cumin and olive oil in a large bowl and stir to combine.

2. Add the chicken, onion and peppers and stir well to evenly coat in the spicy oil.

3. Transfer to a large baking tray and arrange in a single layer. 

4. Place in the oven. CAST OVEN: on shelf 3 in roasting oven or oven on R8. FAN OVEN: preheated to R7/200oC/400oF. Roast for 15 minutes, or until chicken and vegetables are cooked and starting to brown. Cook for further 5 minutes if needed. 

5. When fajitas mixture is cooked, serve with warm tortillas and desired toppings, we like guacamole, sour cream and grated cheese.
