Roasted Fruits

A simple, fast but oh so tasty way of serving a selection of fruits, they take on the flavour of the seasonal spices and are delicious served with ice cream, cream or custard.  A piece of shortbread could be the best accompaniment.

Roasted Fruits

Serves 4

2 plums, stoned and cut into 6

2 figs, cut into 6

200g fresh pineapple chunks

125g blackberries

150g blueberries

100g canned apricot halves, drained

150g fresh cherries

150g strawberries, hulled

4 tbsp runny honey

25g butter, diced

3 cinnamon sticks

3 star anise

Preparation Time: 20 minutes. Cooking Time: 15 minutes

1. Place the prepared plums, figs, pineapple, blackberries, blueberries, apricots, cherries and strawberries in an AGA ceramic roasting dish

2. Drizzle with the honey and dot with the butter. Tuck the cinnamon sticks and star anise into the fruit.

3. Place in the oven CAST IRON OVEN: slide onto the third set of runners down in the roasting oven or oven on R6 FAN OVEN: preheated to R6/180oC/350oF Cook for 10 – 15 minutes or until the fruits are heated through, starting to soften and release the juices.

4. Serve hot with ice cream, cream or custard.
