Welsh Cakes are a sweet bread from Wales. Traditionally, they are made using a cast-iron griddle, so the Rayburn and AGA hotplates are ideal for baking this treat.

225g plain flour
1 tsp baking powder
1/4 tsp mixed spice
55g butter
55g lard or white fat
85g caster sugar
85g currants
1 egg, beaten
2-3 tbsp milk
Makes 20
1. Sift the flour, baking powder and spice together, and then rub in the fats until the mixture resembles breadcrumbs. Mix in the sugar and currants. Add the egg and enough milk to make a stiff dough.
2. Roll out to about 1/2 cm thick and cut into rounds.
3. Lightly oil the Rayburn simmering side of the hotplate or AGA simmering plate and cook the Welsh cakes until golden brown, about 4 minutes on each side.
Serve hot with butter.
