Broccoli and Goat's Cheese Tart

The AGA cooker's radiant heat really comes into its own with this dish, the filling comes out heavenly light and cooking on the floor of the oven ensures a crispy, cooked pastry base. As well as making a really good stand-alone light lunch or snack, small garnished slices can become a cracking starter when entertaining. Many thanks to AGA Specialist Dawn Roads for this great recipe. 

Broccoli and Goats' Cheese Tart

Serves: 6

Preparation time: 10 mins

Cooking time: 25 mins

Total time: 35 mins. 
 

Ingredients 

375g rectangular piece ready rolled puff pastry

500g broccoli florets, blanched and cooled

125g goat's cheese, no rind, diced

3 free range eggs

300ml double cream or whole milk

Salt and black pepper

100g hard cheese, grated

Method

  1. Lightly butter an AGA Portmeirion ceramic baking tray and line with the puff pastry.
     
  2. Place the broccoli florets over the surface and dot pieces of the goat's cheese between broccoli florets.
     
  3. Beat the eggs with the cream and season to taste. Pour over the broccoli, then sprinkle with the grated cheese. 
     
  4. Place in oven 

    CAST OVEN: on the floor grid in the roasting oven or oven on R7 setting. Turn if needed for last 5 minutes
    FAN: place dish on a heavy baking sheet heated in the oven preheated to R7/200oC/400oF for about 25 minutes until golden and set. Turn for the last 5 minutes if needed.
     
  5. Serve warm or cold with a salad.
