Cola Cooked Gammon Ham

The aroma of this ham cooking in the oven is one of my favourite smells of Christmas! The flavours of honey, orange and cloves conjure up for me the essence of this festive season. Recipe produced by AGA Demonstrator Penny Zako. 

Gammon joint

Gammon ingredients

1.1kg/2.5lb gammon joint

1 bay leaf

2 star anise

10 peppercorns

Bunch of parsley

1 onion

1 carrot

½ leek

½ celery stick

1 garlic bulb cut in half

Handful of parsley

Large bottle of cola

 

Glaze ingredients

4 tbsp. honey

1 tsp. cinnamon

1 tsp. ground ginger

1 tbsp. soy sauce

1 tbsp. English mustard powder

2 tbsp. demerara sugar

 

1. Place the gammon joint in a large saucepan and cover with the cola, top up with cold water. Bring to the boil and remove any of the white scum which rises to the surface. Add the remainder of ingredients and bring up to the boil.

2. Place into the simmering oven and cook for 25 minutes per 450g/1lb or until tender. Remove the gammon from the pan and drain well. Remove the rind leaving a layer of fat beneath. Score a diamond pattern.

3. Mix the glaze ingredients in a small pan and heat gently until combined then spread generously over the gammon. Place into a roasting tin and place in the oven for 15-25 minutes.

NB: to store the ham soak a tea towel in 2 parts water and 1 part white wine vinegar, wring out and wrap the ham before placing in the fridge.

4. Soak the bag every 3 days.
