Pancakes with the taste of Christmas spice and mincemeat. The sugar content is less than normal as sweetness is obtained from the mincemeat. Serve warm with butter or ice cream.
115g (4 oz) self raising flour
½ tsp cinnamon
15g (½ oz) caster sugar
2 tbsp mincemeat
125ml (¼ pint) milk

1. Place the flour, cinnamon and sugar in a basin; make a well in the centre. Add the egg and mincemeat together with half the milk, whisk together and thin to a dropping consistency with the remaining milk.
2. Wipe the simmering plate with a little oil on a piece of kitchen paper. Drop tablespoons of the mixture onto the simmering plate, when bubbles rise to the surface, turn over and cook the other side. Keep warm on a plate covered with a piece of foil, or Bake-o-Glide, in the warming or simmering oven.
