
Poached Fruit Compote
225g (8 oz) dried mixed fruit: pears, apple rings, figs, prunes etc
600ml (1 pint) cold Earl Grey tea
300ml (½ pint) clear apple juice
1 tbsp runny honey
This can be served warm or cold – depending upon the weather!
Method
Place all the ingredients in a pan with a tight-fitting lid.
2, 3 and 4-oven AGA
Bring to the boil and transfer to the Simmering Oven for 30-40 minutes until the fruit is plump and tender
Conventional cooking
Bring almost to the boil and then slowly simmer until the fruit is plump and tender, at least 30 minutes. Variation: use a plainer tea and add a cinnamon stick.
