French Toast is a great way to start the day and was the typical breakfast to prepare you for a full day of ice hockey among French Canadians. By Derek Stump, Assistant Manager at Divertimenti.
In shallow bowl combine eggs, milk, vanilla, cinnamon, and salt. Dip slice into egg mixture, turning to coat. Transfer to a plate. Heat oil in skillet over medium-high heat. Cook slices, about 2 minutes turning once. Transfer to a clean plate. Using a knife cut the slices in half from corner to corner forming 2 triangles. Dip (pour on) in maple syrup, and place on a platter. Garnish with blueberry and sprinkle with icing sugar or add crème fraîche.
