Swinton Park is a luxury castle hotel, nestled at the heart of a 20,000 acre Swinton Estate in the Yorkshire Dales. Swinton Park Cookery School is located adjacent to the hotel, in the ground floor of a converted Georgian stable wing. Light and airy throughout, the stylish décor is comfortable and informal – a relaxed environment well-disposed to the appreciation of good food and fine wine.
The demonstration kitchen has been designed to the highest specification with individual workspaces for 12 students. A homely atmosphere is created with a four-oven Aga and country-kitchen style furnishings, complemented by Fired Earth tiles. Additional kitchen appliances have been supplied by Gaggenau and a full range of kitchen equipment by Kenwood, Le Creuset, Thermomix, All-Clad and Wusthof.
The four acre walled garden behind the hotel is planted with fruit, vegetables and herbs, providing a ready source of fresh ingredients for the cookery school kitchen, while the surrounding Swinton Estate provides game, venison and home-reared pork, as well as a host of wild ingredients for foraging. The rolling hills of the Yorkshire Dales beyond also provide some of the best artisan-made ingredients in the UK.
The Cookery School is run by Chef Director, Stephen Bulmer. Stephen spent the early part of his career in Michelin-starred restaurants, working for top chefs including Raymond Blanc, Georgio Locatelli and Simon Hopkinson in the UK, as well as Georges Blanc in France. He moved into teaching after finding his greatest pleasure was in sharing what he had learned, running the Raymond Blanc Cookery School at Le Manoir aux Quat’Saisons for six years and his own cookery school, Brook Hall in Buckinghamshire. He combines his top-level cookery skills with a gregarious personality - a winning combination:

Stephen’s courses are designed to feature the best dishes he has come across in his career. Every recipe includes the most effective techniques he has found for achieving consistent success and each is designed to provide a base for a further range of dishes with seasonal variations. This approach means that whether you are a beginner wanting to learn basic skills or an experienced cook wanting to develop a broader recipe repertoire, the dishes you cook will always be exciting and appealing.
Stephen runs a busy programme of two day, one day and half day cookery classes throughout the year. Courses are available at a range of skill levels, from Professional Development to teenage and children’s cookery lessons. All classes are hands-on and practical, covering a range of themes from French cuisine to the cooking of South East Asia and cookery techniques from Game Preparation to Baking. Specialist tutors also visit to run Indian Masterclasses and ‘Wild about Food’ foraging courses. Chef’s Table demonstration dining experiences also take place regularly at the Cookery School, offering guests the opportunity to enjoy the entertainment of a cookery demonstration with fine dining. The Cookery School is also an integral part of Swinton Park’s Gourmet Weekends, which combine wine tastings and cookery demonstrations with fine dining.
Swinton Park Cookery School is a founder member of the Independent Cookery Schools Association and has been a finalist in the British Cookery School Awards for the last three years, regularly appearing in lists of Top 10 Cookery Schools in the media.
